Collaboration Guest Chef Dinners

Last year, Chef Jorge Luis Hernandez (San Antonio native; Isidore, San Antonio—Michelin-starred) teams up with Pal’s Chef Conrado Gonzalez (South Texas; formerly on the opening team at Corima in NYC, which earned a Michelin star) for a limited-seat oyster dinner created exclusively for Oregon Oyster Festival Weekend.

The core Oregon Oyster Festival experience: a ticketed tasting faire across our indoor space and covered waterfront deck. You’ll visit eight stations featuring multiple oyster farms shucking and talking through their harvest (including oysters that are just hours out of the water), plus an oyster grilling station and a chef grilled oyster competition.

  • Family policies vary by venue and programming. Please review the ticket page for age guidance and entry rules, and note that some areas may be 21+.

  • Yes—most programming runs rain or shine. Dress for coastal weather. In rare cases of safety issues, we’ll post updates on the website and send ticket holders an email.

  • Tickets are generally nonrefundable. If transfers are allowed, details will be on the ticket page and in your confirmation email. Contact us for support as early as possible if plans change.

  • There’s ample public parking at Pal’s, so parking is easy—no need to worry. Please follow posted signs and park only in designated public areas.
